ANAREKA-CI

National Association of Attiéké Restaurateurs and Kiosks of Côte d'Ivoire

Promoting, structuring and professionalizing the cassava-attiéké trade — a national culinary heritage serving Côte d'Ivoire's economic and social development.

Culinary heritage

Attiéké — Ivorian Culinary Heritage

Attiéké — a know-how passed down for generations

Cassava harvest
Step 01 / 07 — Harvest

The root of the work

Cassava is harvested at maturity, root by root, by hand — the starting point of all attiéké know-how.

Peeling the cassava
Step 02 / 07 — Peeling

Beneath the skin

Each root is peeled before processing — a gesture repeated thousands of times, day after day.

Grinding the cassava
Step 03 / 07 — Grinding

From solid to soft

The peeled cassava is ground into a paste, ready to ferment.

Pressing the cassava
Step 04 / 07 — Pressing

The time that makes the flavor

The paste ferments, then is pressed to extract the starch — the step that gives attiéké its character.

Winnowing the semolina
Step 05 / 07 — Winnowing

Sifted by hand

The semolina is winnowed and sifted, whatever the weather — rain does not stop the work.

Steaming attiéké over a wood fire
Step 06 / 07 — Steaming

Steamed over a wood fire

Steaming follows tradition, over the fire — a gesture passed down from generation to generation.

Attiéké ready to be served
Step 07 / 07 — Serving

Ready to be shared

Attiéké is served — the fruit of the work of thousands of Ivorian women and men producers.
